Yes, you can choose how many or which photos to import before launching the Smart Editor, and once the project has been created, you can hide all used photos:

This means you can still add all your unused photos to your project at a later stage. 

You can also exit the Smart Editor at any time to create your project entirely on your own.

After the import of your photos, you can add text, forms, change layout, etc.
